There is a side quest to fight Mandalorians on Dantooine. You have to talk to one of the people in the courtyard to do it. But once you kill the leader, I think you'll pick up a second lightsaber. Also, you can swap yours with Bastila's, or pick more up from Dark Jedi and other characters that you fight throughout the game. Unfortunately you can't make more. That was one of the disappointments in both games.
